• 1 head of cauliflower, trimmed and florets steamed
• Chicken broth
• 1/4 cup Sour Cream
• 2 oz fat free Cream Cheese, softened
• 1/4 tsp onion powder
• 1/4 tsp garlic powder
• salt and pepper to taste
Cut cauliflower head into florets. Boil with 1/2 chicken broth, 1/2 water combination until VERY soft. After you have boiled the trimmed cauliflower florets until they are very tender, drain and return to pan.
Mash well (to desired level of smoothness) and stir in the sour cream, cream cheese, onion powder, garlic powder, and salt and pepper to taste.
Put into a round baking dish, cover and bake at 400 degrees for 20 minutes. Makes 8 servings 1/2 cup each.
