Carmel Apple Salad
Ingredients:
• 1 (8 ounce) container fat-free cool whip
• 4 Granny Smith Apples
• 1 (8 ounce) can crushed pineapple in juice
• 1 (6 ounce) box jello fat free sugar-free instant butterscotch pudding mix
Directions:
Mix sugar free butterscotch pudding and Cool Whip Free together.
Drain pineapple and add to pudding mix, blend in apples and chill.

Mashed Loaded Cauliflower
Ingredients
- 4 cups Cauliflower (about 1medium-large head of cauliflower)
- 1/4 cup Egg whites
- 1/2 cup Low fat cottage cheese
- 1/4 cup Grated parmesan cheese
- 1/4 tsp Garlic powder
- 1/2 tsp Salt (or to taste)
- Pinch Pepper (or to taste)
Toppings:
- 1/2 cup Grated cheddar cheese (I used regular, not low fat, it doesn’t melt very good!)
- 1/4 cup Chives, or green onions, finely chopped + additional for topping if desired
- Pieces center cut bacon, cooked and crumbled
Directions:
- Preheat oven to 375. Spray a small casserole dish with non-stick spray. Wash cauliflower, and cut into segments small enough to place in food processor. Pulse until cauliflower reaches a rice-like texture
- Place cauliflower in microwave safe bowl and microwave for 8 minutes. (Do NOT cover or add water).
- Remove cauliflower from microwave and add the cauliflower back to the food processor, adding the rest of the ingredients, (except for the toppings). Pulse until mixture reaches the consistency of mashed potatoes.
- Add half of the chives (or green onions), 1/4 cup cheddar cheese, half the bacon, and stir until well combined. Scoop cauliflower mixture into casserole dish. Sprinkle remaining cheese over top.
- Cover with foil and bake for 25 minutes. Remove foil, and bake for an additional 5-10 minutes or until cheese is melted, and cauliflower is heated through. Remove from the oven, and add additional chives (or green onions) and bacon on top. Serve warm!

Cauliflower Tots
Ingredients:
- 2 cups cooked cauliflower florets, finely chopped *see note
- 1 large egg
- 1 large egg white
- 1/2 cup onion, minced
- 3 tbsp minced fresh parsley
- 1/2 cup reduced fat sharp cheddar cheese, grated
- 1/2 cup seasoned breadcrumbs
- salt and pepper to taste
- cooking spray
Directions:
*to cook the cauliflower florets, steam a little over 2 cups raw cauliflower florets in a little water covered for for 4 to 5 minutes or until tender but not mushy, then drain well and dry on paper towel, then using a knife finely chop and set 2 cups aside.
Preheat oven to 400°F. Spray a nonstick cookie sheet with cooking spray.
In a medium bowl, combine all of the ingredients and season with salt and pepper to taste.

Cheesy Potluck Potatoes
Ingredients:
- 2 lb (32 oz) bag of frozen hash brown potatoes (I used the cubed kind), defrosted (or just use refrigerated)
- ¼ cup chopped onion
- 1 cup fat free sour cream
- 10.75 oz can of 98% fat free cream of chicken
- 1 cup 2% reduced fat shredded cheddar cheese
- Salt and pepper to taste
- ¾ cup of corn flakes, crushed (or crackers)
Directions:
- Preheat the oven to 350. Lightly mist a 9 x 13 baking dish with cooking spray and set aside.
- In a large bowl, combine all the ingredients except the corn flakes and stir until thoroughly combined.
- Pour the mixture into the prepared baking dish and spread evenly. Sprinkle the corn flakes over the top and bake for one hour until potatoes are cooked through. Slice into eight pieces and serve.

Mashed Cauliflower
Ingredients
• 1 head of cauliflower, trimmed and florets steamed
• Chicken broth
• 1/4 cup Sour Cream
• 2 oz fat free Cream Cheese, softened
• 1/4 tsp onion powder
• 1/4 tsp garlic powder
• salt and pepper to taste
Directions
Cut cauliflower head into florets. Boil with 1/2 chicken broth, 1/2 water combination until VERY soft. After you have boiled the trimmed cauliflower florets until they are very tender, drain and return to pan.
Mash well (to desired level of smoothness) and stir in the sour cream, cream cheese, onion powder, garlic powder, and salt and pepper to taste.
Put into a round baking dish, cover and bake at 400 degrees for 20 minutes. Makes 8 servings 1/2 cup each.
